The Carolea olive trees grow in Basilicata and Calabria, A land between the heel and the toe of the “boot” in Southern Italy. They grow in the hilly area of Basilicata and nearby the Ionian Sea in Calabria. Native to this area, the olives produce an excellent oil. A natural choice for grilled scallops, oven roasted cauliflower or baba ghanoush dip.
Flavor Profile: Medium intensity and fruitiness. Light aftertaste possessing a balanced pepper and bitterness with almond overtones. Aromatic notes of apple with artichokes.
